Paccheri with squids Ingredients for 4 people:350g whole wheat paccheri2 small squids1 clove garlicExtra virgin olive oilWhite wineSalt and pepper Clean the squids, cut the central body into rings and the tentacles into small pieces. Heat in a pan 4 tablespoons of extra virgin olive oil with a clove of garlic; add the squid and, after few minutes of cooking on high heat, pour a glass of white wine; cook until complete evaporation. Boil pasta in abundant salted water and drain it al dente, stir into the pan with the squid; complete with a couple of ladles of the pasta’s cooking water to make a creamy sauce. Serve still hot
